Chicken and watercress sandwiches

These delicate sandwiches are the perfect thing to transform a simple afternoon tea into a splendid summer spread.

Ingredients

  • 1 cooked chicken breast
  • a large handful of watercress
  • 4 tbsp mayonnaise
  • 1 tbsp lemon juice
  • salt and freshly ground black pepper
  • 3 slices buttered brown bread
  • 3 slices buttered white bread

Instructions

  1. Remove the skin from the chicken breast and discard. Chop the chicken breast into small pieces and place in a bowl. Roughly chop the watercress and place in a food processor along with the mayonnaise and lemon juice.
  2. Blend then add to the chicken and mix well to coat. Season to taste. Divide the mixture between the brown bread and spread. Top with the white bread and cut into fingers to serve.
